FRUIT: 100% Shiraz ALCOHOL: 14.5% WINEMAKER: Jan McIntosh WINEMAKING: 2007 was a warm vintage, excellent for red wines. This wine is an example of why the Wilyabrup sub-region is becoming known for producing excellent shiraz. Only estate-grown fruit was used in the production of this wine. The fruit was crushed and fermented in closed stainless steel tanks. Once fermentation was complete the wine was gently pressed to ensure soft tannins. Malolactic fermentation was initiated and once complete, the wine was matured for eighteen months in a selection of quality French and American oak barrels. NOSE: Rich dark plums with a touch of spice. PALATE: Luscious, ripe dark fruit. Dusty tannins, persistent length and good balance. CELLARING: A wine to drink now or lay down for 5-10 years for extra complexity.
